Here is something that will make you turn green! Not like the incredible hulk green, but in the spirit of the irish green.
It's St. Patties Day and you just have a hankering for something sweet…and green. Irish Cheesecake Swirl Brownies that will get you dancing the Irish Jig. Literally! they're so rich, creamy, and sweet that your sweet tooth with thank you.
I love Cheesecake, have I mentioned that before? I think I have. Anyway, cheesecake is one of my favorite desserts. And since its St. Patties Day, I thought of making one of my favorite desserts…green. Yes, I said it, green! You've heard of Red Velvet Cheesecake Swirl Brownies. Well, this is the same thing except it's green.
Here's the recipe:
Brownie Batter layer:
2 oz (1/4 cup) of semi-sweet chocolate chips
4 oz. (1/2 cup) of unsalted butter
1 cup of sugar
2 eggs
1 1/2 tsp. ( 7 - 8 drops) of green food coloring
2/3 cup. of all purpose flour
1/2 tsp. of baking soda
1/4 tsp. of salt
Cheesecake layer:
8 oz. (1 cup) of cream cheese (room temperature)
1 egg (room temperature)
1/3 cup of granulated sugar
1/2 tsp. of vanilla extract
2 oz (1/4 cup) of Irish Cream
Prep time: 15 min Bake time: 25 - 30 min Cool time: 30 min Total time: 1 hr. 15 min.

First I pre-heated my oven to 350 degrees.
Took a microwave safe bowl, poured in 2 oz of semi-sweet chocolate chips and 4 oz. (1/2 cup) of unsalted butter. Heated it in the microwave for at least 30 seconds. After 30 seconds, took a fork and whisked it until smooth. Set it aside.
Next, got a mixing bowl and poured 1 cup of granulated sugar, 2 eggs, and 1 1/2 tsp. of green food coloring (make sure it's green! You don't want the wrong color, do you?) Mixed those three ingredients together. Poured my cooled melted chocolate in with the rest and set it aside.
Then I took a separate bowl, mixed dry ingredients, 2/3 cup of all purpose flour, 1/2 tsp. of baking soda, and 1/4 tsp. of salt.
After that, I poured my flour mixture in with the rest of the wet ingredients. Mixed it all together. Make sure that everything is well incorporated.
Take a greased 8x9 baking pan and pour the mixture in and smooth it out, set it aside.
Next, I started the cream cheese layer. Got out another mixing bowl, threw in 8 oz of room temperature cream cheese, 1/3 cup of granulated sugar, 1 egg (room temp.), 1/2 tsp. of vanilla extract, and 2 oz. (1/4 cup) of Irish cream. Got my hand mixer out and mixed until smooth and creamy. Don't over mix, but mix until it looks smooth and shiny.
Then took a spoon and dipped little dollops of the cream cheese mixture on top of the brownie mixture.
Next, I took a rubber spatula ( you can use a butter knife) and fold in the cream cheese mixture in the with the brownie mixture until it had a marbled effect.
Stuck it in the 350 degree pre-heated oven and baked 25 -30 min or until the edges were lightly browned. *Note, some ovens may vary. Some may take 25 min and some 30 min.
You might want to check it after 25 and stick a butter knife or toothpick in the middle and check to see if it comes out clean.
After 25 minutes, Do Not take it out of the oven just yet. Leave it in the oven with the door ajar for at least 30 minutes so it can set.
After 30 minutes of cooling and setting in the oven, took it out and let it cool for a few minutes before cutting. * After letting cool for a few minutes, you can also put it in the refrigerator and let it chill before cutting.
Knowing me, I couldn't wait. So I just cut right into it. It was so yummy!
Now, take a bite and get jiggy with it!
