It's Earth Day and what better way to celebrate and start off your morning right with some bright and fresh spring vegetables like asparagus. Add some eggs for protein and you have a nutritious, yet scrumptious frittata. You will feel like you've not only contributed to your health food footprint, but to the Earth as well.
It's been 45 years since the first Earth day in 1970 and we are still celebrating better ways to take care of our planet. We have accomplished so much within these years and yet we still continue to not only take care of our planet, but our health as well. I thought what a better way to celebrate our planet and our health than making something like an asparagus frittata that is enriched in proteins and vitamins.
What is so funny is that I had to make this for myself since a certain someone, my love Adam, does not like eggs. I usually don't make things like this that he and I both can't share, so I decided why not. I mean, the only thing he's missing out is the yummy veggies that goes in the egg. Unless I could have just used hash browns to substitute the egg, and then we can both be enjoying this yummy, oh so good frittata. But yet, I did not have enough hash browns, oh well. I can make another one once I can get to the store to get more hash browns. Ha! If you don't like or want to opt out on eggs, you can substitute with hash browns as well. It will taste just as good or even better.
Here's the recipe:
6 eggs or substitute 2 c. of hash browns
4 tbsp. of heavy cream, half and half, or a milk of your choice
1/2 tsp. of salt
1/2 tsp. of crushed black pepper
1/4 tsp. of cayenne pepper
1/4 tsp. of cumin
1/4 tsp. of celery salt
1/2 c. (8 sticks) of asparagus (chopped)
1/2 c. or 1 stalk of celery (chopped)
1/2 c. or 1 small onion (diced)
1 tsp. of minced garlic
1/2 c. of cherry tomatoes (sliced)
1/2 c. of hash browns
1 c. of mozzarella cheese
Prep time: 10 min Cook time: 15 min. Total time: 25 min

The first thing I did was pre-heat the oven on broil. Get a half a dozen eggs (6 eggs), cracked them into a small mixing bowl and gave them a good whisk. Next I poured 4 tbsp. of heavy cream, salt, pepper, 1/4 tsp. of cayenne pepper, 1/4 tsp. of cumin, 1/4 tsp. of celery salt and whisked that all in. Set it aside.
Next, I diced and chopped 1/2 c. of my asparagus, celery, and onion. Put it into a 8 inch cast iron skillet with about 1-2 tbsp. of olive oil. *If you want, you can use a couple of tbsp. of butter. Sauteed them on medium high heat for about 5 min.
Then I put 1 tsp. of minced garlic, 1/2 c. of hash browns, and 1/2 c. of sliced cherry tomatoes in and stirred it around for another couple of min. * You can use any type of tomato you like. I used cherry tomatoes because that is what I had on hand. Next, I took my egg mixture that I set aside, poured that in and 1 c. of mozzarella cheese and simmered it on medium low for a few min, about 2 - 3 min, or until the egg is set but the middle is still a little runny.
After that, I put my frittata into a pre-heated oven on broil and broiled it for about 5 min or until top is browned, bubbly, and the rest of the egg frittata was completely set.
There you have it, a yummy and healthy asparagus frittata that will not only put a spring into your healthy food footprint step, but it will also make you feel like you've done something good for your planet.
