It's Super Bowl Sunday! You know what that means, time to put on those football jerseys and dish it out in the kitchen. The Super Bowl is not all about the game, commercials, or halftime; it's all about the favorite game day food, right? If you are looking to make a touch down for the win, here is one HOT super bowl that no one will ever forget, it's Super Bowl Sunday Chili!
Almost every year since I was a young tot, it has been a tradition to make chili on Super Bowl Sunday. The reason why my family chooses to make chili on Super Bowl Sunday is because for one: it's filling and two: it's usually chili outside and it warms us up (No pun intended). This chili recipe has been circulating in my family for at least 30 years. Now if you are wondering how old I am since I said that my mom has been making it since I was a young tot, let's just say old enough. Ladies never tell their real age, right ladies? Anyway, back to the chili. This chili recipe has been made the same way every year along with some occasional adjustments, due to allergies for certain people, not me though. As soon as I moved out and started making it for myself and my love, I've added some ingredients to give it a little kick and some flavor. I'm not big on spice, but my love however, loves it! So with this recent chili recipe I added jalapenos, hot sauce, and stout beer. Yeah, you know what I'm talking about. That should be a touch down in my playbook.
Here's the recipe:

Serves: 10 - 12
2 pounds of ground beef or chuck
1 medium onion (diced)
1 bell pepper (diced)
2 jalapenos (diced)
2 (15 oz.) can of red kidney beans
2 (15 oz.) can of spicy chili beans
2 (15 oz.) can of stewed tomatoes
2 tsp. of minced garlic
3 tbsp. of chili powder
1/2 tsp. of cayenne pepper
1/2 tsp. of cumin
1/2 tsp. of onion powder
1/2 tsp. of garlic powder
2 tsp. of worcestershire sauce
8 - 10 dashes of hot sauce (or maybe a little more)
1 (12 oz) bottle of stout beer
salt and pepper to taste
First, I heated up my dutch oven pot on medium high heat. Poured about a couple of tablespoons of oil and put in my ground beef and cooked it until completely browned. While my beef was browning, I diced and chopped my onion, bell pepper, and 2 jalapenos.
After my beef was completely browned, I did not drain it, I wanted to keep that beef fat because it adds flavor. I just added my diced onion, bell pepper, and jalapenos and sauteed those down in the beef until they were soft and translucent.
Added chili powder, cayenne pepper, cumin, onion powder, garlic powder, minced garlic, worcestershire sauce, hot sauce, salt and pepper to taste. Cooked that in the beef mixture until all the flavors melded for a couple of minutes. Then poured in my 2 cans of red kidney beans (undrained), 2 cans of spicy chili beans (undrained), 2 cans of stewed tomatoes. You are probably wondering why I didn't drain the beans? Here is the reason why... it adds more flavor. That is what you want, right? Now here comes the mother of all flavors, BEER! That's right, I said beer. But not just any ordinary beer, stout beer. The flavor of the stout beer just gives it that much more oomph! Bring the pot of chili up to a boil and then lower the heat to give it a good simmer for at least 45 - 50 min.
Now after the chili has simmered and married all those wonderful flavors together, serve it up hot with some cornbread. Top it with a big dollop of sour cream, cheddar cheese, cilantro, green onions or chives (or both).
It's Super Bowl Sunday! So grab a bowl cause it's chili outside!
