That is if you still have some leftover like I do. Bought way too much ham than I bargained for. Ha! Those ham sandwiches are good, but it can get boring eating them day after day. You probably understand what I'm talking about. Here is something that you might consider worth shall I say a "double bite," Cheesy Ham and Red Skin Potato Bake. This meal in one is a cheesy goodness that will make you think…what ham sandwiches!? They are a thing of the past.
I was scrummaging through my refrigerator the other day, as usual, trying to figure out something to eat. I looked at the leftover delicious heavenly honey ham starring me right in the face and thought? "I don't wan't another sandwich." So I started to think what can I do with this ham? I thought of my most favorite meal, which is a pork chop and potato bake and incorporate the ham in place of the pork chop. Awesome! I think so.
Here's the recipe:
4 - 5 big slices of ham
1 lb of red skin potatoes
8 oz of sour cream
10 oz of cream of celery soup
1/2 c. of milk
1 c. of cheddar cheese
1 c. of fried onions
1/2 tsp. of seasoned salt
1/2 tsp. of celery salt
1/4 tsp. of pepper
Prep time: 10 min Cook time: 1 hr. Total time: 1 hr. 10 min
Cooking Skill: Easy
Serves 6 - 8
Preheat oven to 350
First, I washed and dried my red skin potatoes, then I diced them into small cubes. In a mixing bowl, combined 1 can (10 oz.) of cream of celery soup, 1/2 c. of milk, 1 c. (8 0z.) of sour cream, 1/2 tsp. of seasoned salt, 1/2 tsp. of celery salt, and 1/4 tsp. of pepper. Stir in the diced red skin potatoes, 1/2 c. of the cheddar cheese, and 1/2 c. of fried onions. Now the reason why you pour half of the cheese and fried onions, just wait until later, you'll see.
Layered the cooked 4 - 5 slices of that delicious honey ham on top. Put in the oven covered at 350 for 1 hour. After 1 hour, take it out and pour the rest of cheddar cheese and fried onions on top.
Dish up and serve with some yummy greens or beans, Or maybe both and...
